Theresa cooks her way back into MasterChef

A DESSERT with a few surprises earned Theresa Visintin a spot back on MasterChef tonight.

The mum beat out the other 11 contestants eliminated from the Top 24 so far for the coveted second chance with a winter snowball dessert inspired by her husband and children back home in Vancouver, Canada.

The 12 eliminated cooks had one hour to make a dish to show the judges how much they've grown.

Anastasia used the Power Apron to allow good mate Theresa to choose one additional ingredient, coconut, for the cook.

Theresa, who did work experience with MasterChef graduate Reynold Poernomo after her elimination, used the coconut to make a yoghurt marshmallow snowball rolled in coconut and rosemary with yoghurt snow, meringue and raspberry puree-filled chocolate balls.

The judges praised Theresa for the surprising combination of raspberry and rosemary.

"Food should make you happy," George Calombaris said.

"When you eat it, it should evoke a memory; it should have texture, (and) flavour. If you were eating that with your partner then you would share it and fall in love."

Theresa is now back on the show as a fully-fledged contestant and wears the Power Apron.

Curtis Stone guest stars tomorrow night.
