No waste model ideal for Byron Bay cafe
LOCAL cafe owners Nikki Muler and Dan Readman are aiming to make their Bayleaf Cafe waste-free.
The popular Byron cafe currently generates about 1000kg of organic waste and 40kg of coffee waste a week. In an innovative plan this waste will now be taken by a couple of their local suppliers to be composted for use on their farms. In turn Hayters Hill Farm supply Bayleaf with meat and eggs and market gardener Matt Rissman will be growing and supplying kale.
“Our aim is to have nothing going into landfill,” said Mr Readman. “Its sounds easy to do but it is actually like starting a whole other business.
“In a place like Byron Bay it makes sense to work towards this sustainable model becoming a business standard for Byron Bay.”
Dan is also working with other suppliers to have produce delivered in recyclable crates to cut down on cardboard waste. He believes the no waste model will save his business around $10,000 annually.
